Try This! This dal makes an excellent, protein-rich filling for wraps. Spread a tablespoon of hummus and then a tablespoon of sooki dal on a flour tortilla. Add any veggies you like, roll, and serve. You can also make this into a healthy side salad by adding 1 cup of cooked dal to 1 cup of chopped greens. Add mushrooms, and it’s even better.
This recipe can be made in a 4-quart or 5-quart slow cooker using the same measurements.

I describe this soup as spring in a spoon. It’s sweet, refreshing, and deceptively easy to make. The taste is just a bit sweeter than its green counterpart, and the bright yellow color of this soup is a welcome change to ring in the warm months of the year—we seem to have too few of them in Chicago!
